Bea's Cous Cous
| 1 Large onion chopped |
| 1 pack (~200g?) of feta cheese chopped/crumbled |
| 1 tin black olives chopped |
| 1 pack (100g) brazil nuts chopped |
| 1 can of chickpeas drained and washed |
| 3 lemons juiced |
| 3 cups of cous cous |
| couple of Handfuls of pumpkin seeds |
fry/sweat aubergine and onion until the aubergine is soft
put cous cous in pan add 3 blue cups of boiling water and cover, leave for 5
minutes.
add feta to cous cous and stir
add warm vegetables and olives, chickpeas, nuts, pumpkin seeds stir
add the lemon juice and stir well.
serve warm (or cold the next day)
