Spicy lentils and rice

This is real comfort food. Easy to make and adapt. I usually have the ingredients in my store cupboard which is alway handy

3 Hand-fulls of brown Rice
1 Hand-Full of red lentils
1 red pepper or preserved pepper chopped
1 tsp of smoked paprika
1/4 tsp chili puree
1 handfull grated Chedder
1 handfull pinenuts or mixed seeds

Put everything apart from the cheese and the pine-nuts in a saucepan. Add enough boiling water to cover and cook until soft (~30 minutes). Add more water a little at a time as needed.

Meanwhile toast the pinenuts in a dry frying pan

When the rice is soft and the water all evaporated stir in the cheese and pinenuts

Adaptations

Add fried/caramalised onions
used cumin and corriander instead of paprika
Press into a flat dish and serve cold cut into cubes
