Spicy lentils and rice
This is real comfort food. Easy to make and adapt. I usually have the ingredients in my store cupboard which is alway handy
| 3 Hand-fulls of brown Rice |
| 1 Hand-Full of red lentils |
| 1 red pepper or preserved pepper chopped |
| 1 tsp of smoked paprika |
| 1/4 tsp chili puree |
| 1 handfull grated Chedder |
| 1 handfull pinenuts or mixed seeds |
Put everything apart from the cheese and the pine-nuts in a saucepan. Add enough boiling water to cover and cook until soft (~30 minutes). Add more water a little at a time as needed.
Meanwhile toast the pinenuts in a dry frying pan
When the rice is soft and the water all evaporated stir in the cheese and pinenuts
Adaptations

| used cumin and corriander instead of paprika |
| Press into a flat dish and serve cold cut into cubes |
