Rick's Dad's Rice salad
| 125 g rice |
| 1 pepper |
| 200 g dates chopped |
| 6 spring onions |
| 50 g cashew nuts |
| 1 teaspoon ground cinnamon |
| 1 teaspoon ground cumin |
| 1 tablespoon sunflower oil |
for the dressing approximately
| 2 tablespoons sunflower oil |
| 1 tablespoon soy sauce |
| 1 tablespoon lemon juice |
| 1-2 garlic cloves crushed |
| 1 inch piece of ginger grated/chopped/crushed |
| salt and pepper |
boil the rice
meanwhile chop the pepper and spring onions.
to make the dressing mix all the ingredients preferably with
a hand blender to mix the garlic/ginger well in.
fry the cashews in the oil until they turn golden brown.
add the spices, stir for a few seconds,
remove the cashews
and rinse the pan with the salad dressing toincorparate the remaining spices.
mix the peppers, dates, onions and cashews into the rice whilst it
is still warm and then stir in the dressing
